Ziyad's dried small fava beans are a protein-packed, versatile pantry staple across Middle Eastern, Mediterranean, and North African cooking. Unlike the canned version, these need soaking before cooking but reward the extra time with a firmer bite and deeper flavor once simmered.

Soak for several hours (or overnight) before cooking, then simmer for 2–2½ hours until tender. Mash with garlic, lemon, and olive oil for classic ful medames, or stir into stews and soups.
